Vegetable kofta
Koftas are deep fried balls made from mixed vegetables and they are added into the creamy, delicious, restaurant style gravy. Similar to any kofta dish, this can be time consuming but if you plan ahead and work a few tasks simultaneously, it will be ready in just one hour.
Ingredients:
For Vegetable Balls:
2 potato (boiled, peeled and mashed)
A pinch of capsicum seeds(finely chopped)
Half carrot (finely chopped)
1 green chilli (finely chopped)
1/2 teaspoon Ginger and garlic paste
Salt (according to taste)
1/2 teaspoon Garam masala or mixed spice
Red chilli (according to taste)
1 tablespoon gram flour
A pinch of Cumin seeds

For Curry:
1 onion
1 tomato
Cooking oil
1 teaspoonful ginger and garlic paste
Salt (according to taste)
Red Pepper (according to taste)
Half teaspoon Turmeric powder
Half teaspoon garam masala (mixed spices)
2 tablespoonfuls of yogurt
Method:
1. To make vegetable balls ,mix all above mentioned ingredients together in a bowl and make into small balls.
2. Separately, mix gram flour, black pepper and salt. Add water and mix it to form a viscous mixture.
3.Dip the balls into the mixture and then deep fry in oil. Put deep fried vegetable balls to one side.
4.Blend onion and tomato. Heat oil and add garlic and ginger. Then add blended onion and tomato and cook for 2 minutes.
5.add salt, turmeric powder, garam masala and red pepper, according to taste. Add yoghurt. Keep stirring until gravy gets thicker and properly cooked.
6.Now,turn the stove off and add fried vegetable balls into the gravy while it is hot.
7.Garnish the gravy with fresh coriander leaves and serve to your loved ones with boiled rice or tortilla or chapatis.
